Fabulous Ferments

I have been really obsessing about fermented foods of late, and wanted to share just how easy it is to make all sorts of fermented vegetables. Most people tend to eat these as a small side dish or as a pickle, but I have literally been eating moundfuls and making them the star component. Also, living by myself and being busy I was finding I was accumulating quite a lot of "past their best" vegies in my crisper.  So now I have no wastage - I buy my vegetables, and ferment them in jars. So they sit in my fridge...

I'm crazy about carrots

I'm crazy about carrots

I have lots of customers asking for more paleo recipes, so am slowly trying to build up a good selection.  I love a really good carrot cake, and this one is a winner.  The gluten free, paleo recipe has eggs, but I have also trialled a vegan version which is pictured here. This recipe can also easily use any type of nut if you don't like walnuts, or the carrots substituted for zucchini, adding some lime zest and juice, and changing the mixed spice to cardamom and vanilla, and hey presto! A zucchini & lime cake.  Please send me your...

Amazing Paleo bread

Amazing Paleo bread

Recently a customer, Kerrin, contacted me saying she had just bought a packet of my paleo flour and needed a bread recipe. No problem! I looove developing recipes to share. So I immediately set about the task. I took 4 attempts, but I was soon rewarded with bread so soft and pliable and full of height. Now this recipe does include 2 eggs, but I promise to make it my priority to work on a vegan paleo bread next. I should have it by Friday all my special vegan friends:) So here it is: Ingredients: 170g Monica's Paleo Flour Mix 170g...

Bread trials a success!

Bread trials a success!

It is with great joy and excitement that I report back with bread trial results from my volunteer testers.  I recently handed out 3 packets of my yet to be released gluten free bread mix to three followers of mine.  Instructions were to empty contents into bread maker, add ingredients listed and press "start". As I said in previous post, I wanted to develop an absolutely amazing gluten free bread recipe that could be made using a regular oven, but especially a bread maker.  Up until now I was the only one to have tried it out with spectacular results. But I...

Gluten Free Bread Maker Bread to die for

Gluten Free Bread Maker Bread to die for

In my field of work developing recipes can be hit and miss. Some days I have to test and re-test a recipe over and over again before I get it, and then there are times where you just nail it first time around. Well this was one of those times. I am currently working on perfecting three new mixes to be launched at The Gluten Free Expo 13th-15th May 2016. One of these is a gluten free bread mix. The criteria to be met was one, it had to look and taste 100% like regular bread, two, it needed to...
